Zucchini Stew
1 package of chicken strips
1 Medium Zucchini
1 Large Onion
1 Green Pepper
2 Cans of Stewed Tomatoes
2 TBS Cornstarch
Mushrooms if desired
Cooked White Rice
Rise chicken strips and lightly flour, then brown in a little oil till tender and thoroughly cooked. Then set aside. Slice zucchini and place in large 3 QT pan. Add the green pepper and onion. Add the stewed tomatoes. Add the chicken and then cover and simmer for about 40 minutes until hot and bubbly. Mix the cornstarch with a little water and stir into the stew and thicken to taste.
Sever over the rice.
