Medical research shows that fish in ones diet that is rich in the omega oil is very important, and fish has less negatives as far as fat and cholesterol and is almost fool proof as far as cooking goes and this cookbook would be an asset in any good cooks library. The recipes are easy to follow and the photography and graphics are wonderful. But I have come to expect that from The Hunting & Fishing Library series and I recommend all the books they produce. Not only will you learn how to safely handle fish and store or freeze it but you will learn that there are bad ways to cook fish that in essence probably is the biggest reason some people try fish and never want it again. There are simple recipes for day to day use and some excellent ones for when company is due for dinner. I wager that a fair number of anti-fish eaters will rediscover the pleasure of fish (my favorites are salmon and trout) once they savor the recipes in this book. And if you have someone in the family who loves fishing, this makes a great gift.

I’ve visited Dave’s restaurant, Esca, many times over and have never been disappointed. He does amazing things with seafood…especially with foods which I would never think of eating raw. I’ve always wondered how he does such masterful dishes and this book gives me that insight, and it’s so simple. I can’t wait to start serving crudo to my guests!

Can someone from Artisan Books or Mr. Pasternack please post the corrected recipe for “Scallops with Sauteed Spinach and Roasted Parsnips” (pgs. 216/217) here?

The description stays: “This dish is one of those seasonal bits of perfection that can’t be improved upon. I love what the orange does to the parsnips — namely, brings a little sweet acidity and zesty flavor to them.”

Mmmm… I’m sure I’d love it too. Unfortunately, there’s no mention whatever of orange in the recipe. Not in the scallop recipe, or the recipe for Roasted Parsnips that follows on the next page. Not in the list of ingredients, nor in the directions.

That quibble aside, the book is gorgeous and the recipes original, well thought-out and fresh. It’s given me a renewed desire to buy and cook more fish – especially those outside my usual repertoire and comfort zone. But please, give your readers the Roasted Parsnip recipe — with the orange included this time!

I love this cookbook and have recommended it to all my friends. The recipes are easy to prepare and include full-color photos. I have fun picking different recipes to try and with 1000 available to me, I’ll never run out! I have had excellent feedback on the dishes I have tried from this book. My family especially enjoys the Mediterranean Chicken, which also received rave reviews when served at a dinner with friends.
We’ve tried lemon chicken, orange chicken, sweet mango chicken and a variety of vegetable dishes. Each one has been delicious.
Needless to say, this is my favorite cookbook of all time!

“First catch your hare,” the old cookery books used to say, and hence it is proper, in a
treatise devoted entirely to the cooking of Unshelled Fish, to pay passing attention to the Catching. As it is evident that the catching must, in every case precede the cooking, but not too far, the preface is the place to begin.

Shell-fish are slow of movement, without guile, pitifully trusting, and very easily caught. Observe the difference between the chunk of mutton and four feet of string with which one goes crabbing, and the complicated hooks, rods, flies, and reels devoted to the capture of unshelled fish.

An unshelled fish is lively and elusive past the power of words to portray, and in this lies its desirability. People will travel for two nights and a day to some spot where an unshelled fish has once been seen, taking .99 worth of fishing tackle, “marked down from .00 for to-day only,” rent a canoe, hire a guide at more than human life is
worth in courts of law, and work with dogged patience from gray dawn till sunset. And
for what? For one small bass which could have been bought at any trustworthy market
for sixty-five cents, or some poor little kitten-fish offspring of a catfish whose mother’s milk is not yet dry upon its lips.

Other fish who have just been weaned and are beginning to notice solid food will repeatedly take a hook too large to swallow, and be dragged into the boat, literally, by
