Glorious One-Pot Meals: A Revolutionary New Quick and Healthy Approach to Dutch-Oven Cooking Reviews

I purchased this cookbook when I was given a dutch oven for Christmas. I was excited about the gift, but wanted to learn more about how to use it. The recipes in this book have left me underwhelmed thus far (I’ve only had it about a month, but I’ve made two to three dinners from this book a week, so it’s getting good use). Some are definitely yummy (Chicken Satay stands out as my favorite), but some just didn’t seem to have as much flavor as I was hoping for. Regardless, this cookbook is a must-have for learning how to cook in a dutch oven. I’ve come up with my own recipes and ingredients, but cooked them as advised and explained in this book and everything comes out wonderful!!! I can’t believe how quick and easy it is to get dinner on the table now!
Another note – most recipes call for baking in a 450 degree oven, but my dutch oven (Lodge Color Enameled Cast-Iron 6-Quart Dutch Oven, Island Spice) indicated that it shouldn’t be used above 400 degrees. I kept the oven at 400 and kept a close eye to see if I would need to modify the time, but didn’t – everything still cooked up perfectly and in the noted time.

I have been enjoying the original book for a few years now and just had to get the updated version as soon as I heard it was coming out. I am eager to try the many new recipes available. We fixed the Amaranth Chili the day I got the book and it was fabulous. I substituted butternut squash for the zucchini and used venison instead of beef. We are hunters and I have found that elk and venison work great with this cooking method.
I love the ease of preparation and the flexibility in the recipes. It is nice to put together dinner in just a few minutes, clean up after prep in just a few more and then have about 30 minutes to relax before dinner is ready. I appreciate that the recipes all use healthy foods and not cans of “cream of something” soup or other highly processed ingredients. I have found that many of the recipes (especially those with grains included) serve my husband and me for two nights. The enameled cast-iron dutch oven is a breeze to clean – it is like teflon if you spray it first as recommended.
After hearing Elizabeth speak at one of her book signing parties, I am also eager to branch out from the published recipes and try some one-pot versions of our old time favorite foods. This really is fool-proof cooking if you follow just a few basic guidlines – the right pot at the right temperature for the right amount of time.
I highly recommend this book to anyone who wants to eat delicious, healthy meals with little effort.

Diabetic Meals in 30 Minutes–Or Less!, 2nd Edition Reviews

I originally purchased this cookbook for my Dad, who is a Type II Diabetic and normally doesn’t cook much since Mom died. I flipped through it and tagged at least 15 different recipes that I wanted to try for myself. This is a great all around cookbook for several reasons:
* all of the recipes use nutritious, natural foods that are readily available
* most of the recipes call for only a few ingredients, so even those new to cooking will be successful
* the basic dishes are done in no time and can be frozen
* the recipes can be easily doubled or tripled
* it offers a delicious variety that are delightful and satisfying
I’m a professional firefighter/paramedic and I can tell you from experience that Type II Diabetes is in fact, becoming an epidemic. Firefighters have to watch what we eat as well, which is not always easy, because we need it to be fast, filling and able to withstand being reheated over and over again (since mealtime is usually interrupted). High fat, high salt and high cholesterol may be tasty, but they’ll kill you. This book offers wonderful recipes that fit the bill and I should know – I’ve made them with fantastic results!

I used to say I’d eat what I wanted and just take more insulin. As I have gotten older, not sure about the wiser part, I have learned I must work with my diabetes if I plan to live. This book is an invaluable tool for doing that. Great meals made easily–even after a hard day at work. I love this book and the Italian Diabetic Meals in 30 Minutes or Less, also by Webb. Buy it and enjoy some delicious and healthy meals.

Meal by Meal: 365 Daily Meditations for Finding Balance Through Mindful Eating
Meal by Meal is a book of comfort, guidance, and insight for anyone with an unhealthy relationship with food. Its power is in its approach: each day is a self-contained journey of conscious eating to help people nurture new and sustainable attitudes and practices. Although bad habits cannot be changed overnight, the author, Buddhist devotee Donald Altman, shows how to find peace by focusing on food issues one meal at a time. He shares inspirational daily meditations, including quotes from Zen stories, Native American practices, Hindu scriptures, the Bible, and sages from all major wisdom traditions. He also explores food preparation, rituals, and social attitudes and examines questions like “How can we learn that eating is not a pleasure race, but an area to find grace?” and “How can we stop using food to fill ourselves up, and instead use it to fulfill ourselves?” Through daily reflections, Altman enables people to make wise food choices and create balance in their lives.

Meal by Meal: 365 Daily Meditations for Finding Balance Through Mindful Eating Reviews

I was familiar with the work of Donald Altman from his earlier ‘Art of the Inner Meal’ and was impressed how his writing has found a fresh and densely pragmatic new form. ‘Meal by Meal’ is a fluid read of inspiring quotes coupled with practical insights by the author. This book is extremely handsome, a beautifully laid out composition making this both useful and pleasurable to read. If you have the discipline to read a page at a time, you will find this helpful day by day. I personally had trouble putting it down and would read a month at a time… but the suggestions are valid and useful on a second slower read. Worthwhile investment for someone wishing to calm their compulsive behavior for a more reflective perspective.

Beauty is not just skin deep with MEAL BY MEAL. This is a gorgeous book by any standards, and usually I don’t mention cover and interior layout design when reviewing a book. But this one stands out above the crowd. The content is awesome, especially because of the unusual format– daily themes around food (7 of them) that repeat week after week for the entire year. Each daily theme begins with a quotation, and these are from such wide-ranging sources that they are a joy to read in and of themselves! From Gandhi and Jesus to Sophia Loren and Mark Twain, these quotes set the stage for Altman’s insightful and memorable commentaries about how you can engage with your daily meal in a mindful and aware way. In particular, I like that Altman includes everyone– singles, those with partners, and families–and all ways that food is experienced alone or with others. There is no judgement here of eating either–just more and more awareness of how to break free from unhealthy eating habits and how to use food for mind, body, and spirit. Altman even includes lots of little nutritional ideas and tips, such as using food as medicine by getting enough vitamin K and antioxidants in your food choices. I find myself jumping ahead from page to page just for the fun of it. This book is an eye-opening and mouth-opening experience that you won’t want to miss, and personally, it has made food a more delightful and less stressful experience for me. Whether you’re on a diet or just eating food because you love it, this book helps you experience and savor food more deeply in each of the book’s food themes– Entry, Choices, Preparation, Ritual, Eating, Community, and Departure. Great book to share with others, too.

Healthy Meals for Less: Great-Tasting Simple Recipes Under a Serving Reviews

I have used this book for several recipes this past week and my picky family has enjoyed every dish. I like how it has the price break down although I have not verified them yet. The dishes are healthy, flavorful and inexpensive. I feel as though my arsenal of meals to make for my family within budget has multiplied. I am a person that likes to try new things but hate cookbooks that call for ingredients I don’t have in my kitchen. The reason why I have not verified price is because I had all the ingredients in my kitchen already. No special trips to the store. This book is a must for every mom who would like to make from scratch, healthy, inexpensive meals

I have read her other books and a lot of the recipes were in a past book. I enjoyed the recipes, but I wanted more new material.

“For help from an expert, try First Meals, a beautifully illustrated, easy -to-follow guide to cooking for kids up to the age of 5.” NEWSWEEK
“Annabel Karmel’s First Meals may be the perfect new-mom gift…” TIMEThere’s a popular game at baby showers in which the new mom-to-be has to taste jarred baby food and guess its contents. Inevitably, the first comment is “Yuk! How do they eat this stuff?” The answer, of course, is that babies don’t know there’s an alternative–fresh, delicious, wholesome food made at home. In the beautifully and extensively illustrated First Meals, Annabel Karmel explains how simple and satisfying it is to make baby’s food yourself–from the earliest mashed banana and steamed carrot purees to Singapore Noodles for 3- to 5-year-olds. Karmel begins with an extensive section on early nutrition, pointing out that while grownups are often encouraged to follow a high-fiber, low-fat diet, “the under 5s need significantly more fat and concentrated sources of calories and nutrients to fuel their rapid growth during the early years.” Continuing her “Basics” chapter are sections on keeping a well-stocked pantry; the equipment you’ll need; illustrated, step-by-step instructions on preparing your first purees; and notes on freezing and reheating

First Meals (New Expanded Edition) Reviews

I’ve read most every baby food/nutrition book on the market. This book is by far the prettiest: it has beautiful color illustrations that make you feel as if feeding your baby will be an exciting and colorful journey. However, once the romance of the first feeding is gone (and after you’ve scrubbed dried brown banana off your child’s tray for the thousandth time), I fear that this book will get lost in the dusty recesses of your kitchen bookshelf, as my copy has.My main criticism is that the book doesn’t deliver what the cover promises: “Fast, healthy, and fun foods.” The book should be subtitled “Fun foods to make if you are in culinary school and have a whole lot of free time on your hands.” Check out these suggestions: vegetable croquettes, apple, mango & apricot muesli, paella, chocolate profiteroles & puff pastry mice. Even the purees are exotic and complicated: dried apricots with semolina, spinach, potato, parsnip & leek, tasty ground meat with rutabaga & tomato. Now if someone wants to really knock themselves out for a special occasion, I think that these menu suggestions could be very inspirational. But, the average parent just needs someone to tell them that they can steam carrots in the microwave with a little water then mash them with a fork. I really lost hope when I noticed that they devote an entire page to “making purees with a mouli.” Where would I even begin to find a mouli, and if I did, where the heck would I find room to store it? Have these folks never heard of a food processor or blender? Why make life so complicated? I’ve got to imagine that the authors of this book live a very priveledged life or that they’ve never had small children clinging to their legs! I also think that the time estimates for the recipes are inaccurate. Many of the recipes involve quite elaborate decoration suggestions, yet the prep time is listed as only 20 or 30 minutes. Again, the pictures are lovely, and I really do wish my food could be so inventive. But the pictures remind me of the Christmas cookie covers of magazines that showcase all those elaborately decorated cookies that I could never hope to reproduce. Hey, we are not talking high art here, a good day for me is when there is more food in the baby than there is on the floor.Another complaint I have with this book is that it covers too much ground without much depth. This book begins at birth and goes to five years, and it’s only 145 pages. With so much space taken up with glossy pictures and exotic recipes, there is not much room to cover any one topic effectively. All in all, I think this book might be a good supplement cookbook to have. You might pull it out some day when the sun is shining and you are feeling especially ambitious. But, on the average day, I can think of five other cookbooks I’d pull out before it.

If you are looking to move beyond the usual middle American repertoire of macaroni & cheese, fish sticks & fries, chicken nuggets, etc. then I think you will be very pleased with this book. I am a mother of two toddlers (ages 14 mos and 3 yrs) and I am sick to death of prepackaged foods. I checked this book out from the library before deciding to buy it because of the mixed reviews. It is very presentation-heavy, but that’s what makes it fun to look at and gets you inspired. I wouldn’t really make mini pizzas with vegetable toppings cut out to look like animal faces, but I would still use the same ingredients to top my pizzas. Just because the author makes her homemade chicken nuggets in star shapes doesn’t mean you HAVE to do that too! But it’s a good trick if you have a really reluctant or picky eater. Many of the recipes use “exotic” ingredients, like parsnips, shallots, etc. (OK, you foodies, stop snickering.) They are exotic to most mothers of babies and toddlers who can’t remember the last time they ate something you wouldn’t find in a school cafeteria. But part of the appeal of this book is branching out into new foods, almost all of which are available at your local Safeway.Another reviewer complained that some of the food choices were unsafe (choking or allergy hazards), but obviously you have to use your common sense and listen to your doctor’s advice too. I found many references in the book where the author warns against giving berries, nuts, honey, etc. too early, marked prominently in the sidebars. The meal planners for the different ages were great. Most of all this makes you think about what you are feeding your child instead of slinging out just whatever you have in the cupboard. I don’t have any of this fancy equipment (mouli, food grinder, etc.) but most of that is only needed for the baby food recipes. If you have a food processor and a blender, you’re probably fine. If you’re ready to move beyond Gerber pureed peas or Easy Mac N Cheese, give this book a try!

Healthiest Meals on Earth: The Surprising, Unbiased Truth About What Meals to Eat and Why
The first cookbook from best-selling author Jonny Bowden!Jonny Bowden’s The Healthiest Meals on Earth contains recipes for more than sixty dishes and drinks that use nutritious and healthy cooking methods. Forty of these dishes will combine to create ten different “poly-meals”, specially crafted meals that contain key nutrients found to promote long-term health. They include Sweet and Thai Spicy Shrimp and Fruits, Persian Chicken with Autumnal Accompaniments, and the “iron booster” of Tender Calf’s Liver and Sweet Beets. A “Healthiest Holiday Meal” features Citrus Stuffed Turkey, Zippy Fruit Salsa, and Sweet Potato Pie. The poly-meals are designed to be eaten three-to-five times a week.Another ten recipes are not part of the poly-meal structure; instead they are one-pot meals that include Slow-Cooker Chicken Curry, Miso Bean Soup, and Venison Stew. A chapter on drinks will include nutritious smoothies, so-called “green drinks”, and others. Jonny will provide healthy cooking tips throughout the book, as well as an analysis of the foods in each recipe. Side dishes, such as Cold Strawberry Soup and Veggie Slaw with Flax Oil, and desserts, such as Raw Chocolate Fondue, are also featured. This book pairs well with Bowden’s successful 150 Healthiest Foods, and can even be used as a companion cookbook.

Healthiest Meals on Earth: The Surprising, Unbiased Truth About What Meals to Eat and Why Reviews

After being glued to his book: The 150 Healthiest Foods On Earth, I went ahead and ordered The Healthiest Meals on Earth.
Having made a huge change in my own personal diet 3 years ago(after reading Ultrametabolism), after reading Jonny’s 150 Healthiest Foods On Earth helped me tweak my diet that much more. But the problem at home has been that my wife doesn’t know what to cook for me.
This book has recipies for incredible meals based on a solid foundation of real nutrition. Eating with your health goals in mind, you get meals power packed with healthful nutrients that are very appealing visually and pleasing to the olfactory senses (smell).
It’s not just a recipe book, but an explanation of the foods and spices that make up the meal.
There are some wonderful charts in the book that cross reference various foods with their healthful benefits.
He does the same for healthful oils.
If you are big into nutrition, this and his “150 healthiest foods” book are essential for your library.
Whether you are eating because you want to just be healthy or you have a specific condition you want to target with the proper nutrition, this book is great.
The bottom line: Jonny Bowden’s nutritional advice just makes sense!
Thank you again Dr. Bowden for another great masterpiece!!!

I loved this book. Here’s why: First of all, if you’ve read anything of Jonny Bowden’s before, you know he has a great writing style, strong opinions, a huge amount of knowledge and he’s funny. That alone should make anything he writes worth buying. But this book combines all that with some absolutely fantastic- and not difficult to make- recipes. It’s kind of a combination cookbook- nutrition book, explaining why these ingredients were chosen in each recipe, why each meal was put together the way it was, and all the benefits you get from eating it. None of which would matter much if the recipes weren’t so darn good. I mean, I’m no cook, and i can make them. It’s not “doctrinaire”- just really good, original, clever uses of foods in really great combinations with a minimum of sugar and starch and a maximum of whole real foods. I haven’t seen many cookbooks like this- hope they’ll be more. Highly recommended!

The Moms’ Guide to Meal Makeovers: Improving the Way Your Family Eats, One Meal at a Time!
For busy moms, getting dinner on the table night after night can be a challenge. So it’s no surprise that they often rely on fast food, takeout, and convenience meals like macaroni and cheese, chicken nuggets, and fries. The kids love it, but the drawback is that little twinge of guilt moms feel every time they feed their family another marginally healthy meal. At the end of the day, many children end up with a poor diet high in sugar, saturated fat, and calories. . . a major factor in the rising rates of obesity.
High-profile dietitians Janice Bissex and Liz Weiss show fellow moms a better way. In their book, they offer realistic guidelines designed to give families a healthy meal makeover. The duo’s 5-Step Meal Makeover Plan begins with new advice on how to market good nutrition to kids, establish food rules, and make life easier in the kitchen. Their Best of the Bunch Chapter reveals which brands of kid convenience foods—hot dogs, frozen pizza, and more—are the best- tasting and most nutritious ones out there. They follow up with tips for stocking a healthy pantry, and then serve up 120 recipes for family favorites such as Fast-As-Boxed Macaroni and Cheese, Squishy Squash Lasagna, Cheesy Broccoli Soup, Sweet Potato Fries, and Chocolate Pudding with Toppers. All come complete with nutrition information and have been made over to be faster and more nutritious than the originals.
The Moms’ Guide to Meal Makeovers tackles what’s wrong with today’s all-American diet and offers realistic and delicious ways to improve it.

The Moms’ Guide to Meal Makeovers: Improving the Way Your Family Eats, One Meal at a Time! Reviews

These recipes are quick, easy, good, and best of all, a little more adventurous than your normal “family” cookbooks filled with chicken nuggets and pasta. I am not one to plan a week’s meals ahead, and I love that I can open this book and find something great to make out of what I have on hand. I’ve made at least 15 of the recipes and every one was great. The prep time estimates seem to be pretty accurate. Our family in general likes things a little more spicy than most, so some recipes were a little bland but I just add a little more seasoning if that happens. I think they would probably be fine for most people, especially kids. I think the authors are right on the mark with their advice on kids trying new foods, no “yuck!”s etc. Their philosophy is similar to our own house rules, and as a result my boys (3 and 7) are great eaters. I had the pleasure of meeting the authors at a bookstore signing, and I was very impressed with their knowledge, sensibility, and friendliness!

I pride myself on being a pretty good cook, so the idea that a cookbook would contain recipes that were not only easy (being a working mom with five kids made that important), interesting to my children, and, compelling to myself and my partner seemed impossible. I really enjoy this cookbook. I have liked nearly every recipe I’ve tried–the kids have been much more open than I ever imagined–and some of the tips have already infiltrated their way into other meals. I appreciate the ease of preparation; I appreciate the range of foods suggested; I appreciate the graphics and side bars of the book. In other words, I am convinced. I really urge you to give this cookbook along with the authors’ suggestions about changing your family’s eating habits a try.

One-Dish Vegetarian Meals Reviews

I purchased this cookbook partly anticipating new and exciting recipes, partly anticipating it would join the other 40 cookbooks in my cupboard (covered in dust). What a fabulous surprise! So far, I haven’t made anything I didn’t like. The recipes are not too labor intensive, the ingredients are found at the local store – occasionally require a trip to Central Market.
As I get older, it is SO much easier to make one dish meals; less to clean up, less prep time. Experimenting with recipes from around the world spices things up as well- literally and figuratively. I highly recommend this title.
By the way, did I mention I don’t like to cook?

My 3 and 2 year old, as well as myself, have food intolerances to soy, dairy and gluten. On top of that I am vegetarian and my kids don’t really like meat. So I have a heck of a time finding recipes! I came across this cookbook and was skeptical. But I purchased it on a whim. I am so happy I did!!! The recipes are phenomenal!
The author rarely uses cheese in any of the recipes. If she does, it is usually parma sprinkled on top and can easily be omitted. The pasta dishes can all be subbed for a gf pasta, such as Tinkyada. She has a ton of rice dishes and uses all fresh ingredients, which eliminates contamination of soy and gluten. Some recipes call for soy products. Those can either be easily subbed for meat (for you meat eaters out there) or ignored altogether as there are plenty of other recipes.
Some of my favorite recipes in the book are: Black Bean and Avocado Rice Salad, Waldorf Rice Salad, Bell Peppers Stuffed with Rice/Spinach/Sun-Dried Tomatoes, Rotelle with Spicy Pumpkin Sauce, and Green Beans and Rice with Sesame-Orange Sauce.
HIGHLY RECOMMENDED!!!
