My mother in-law bought me this book shortly after I married her son. I think she was a little worried that he wouldn’t eat well because he married a vegetarian. Our first year of marriage I used only this cookbook and a few recipes my mom had given me. I can’t tell you how exciting it was to sit down, read through a section of the book, write a grocery list for the items I would need, write out a dinner menu for the whole week and then call my friends to tell them what I was fixing on each night and ask them what sounded good to them so they could join us for dinner. I did this for several months until my evenings were filled with other activities. (Eating was definitely an activity when it came to using this book.) I have enjoyed every recipe I have used from this book. And they’re so easy!! Here are a few of my recommendations (I don’t have page numbers in front of me): The Barbecue Red Beans, Corn and Rice; Manicotti; Fajitas; Falafel; Hummus; Black Bean Hummus; and so many more. My only problem with some of the recipes is that I’m not a big salt eater and so I changed a few of the measurements on some recipes. And also, because she uses a lot of cheese (which is my favorite food) I gained a lot of weight that year. I do love the fact that she doesn’t suggest using lowfat or non-fat foods to make the recipes but use caution. This is a “must have” cookbook if you love eating really good food!!

The difficulty with most cookbooks is that if you are a vegetarian you must seek and sort out the recipes which don’t use some sort of animal flesh product. 1,000 Vegetarian Recipes makes it simple – every single recipe is meatless – therefore appropriate for my household. Carol Gelles also has a coded system for the different types of vegetarian diets (Lacto-Ovo, Lacto, Ovo and Vegan). She even includes a review of nearly every recipe and alternative ways of making them. I’ve gone from being a non cooking person to being known for my great talents in the kitchen. My secret being this one book! I’m planning to make every single recipe. I also recommend it to everyone I know. It’s the best thing that ever happened to our kitchen.

I’m not new to cooking by any means, but I am new to slow cooking. I was looking for a slow cooker cookbook that would contain vegetarian, Kosher and/or low-fat or low-salt recipes. The last thing I wanted was a dozen ways to make pork roast. This book fills the bill, in part, in that a lot of the recipes are healthy although no one seems to be watching their salt intake. I realize that this is not the purpose of this cookbook but it would be good if alternatives were available.

The cooking times are way off. The book seems to have been written with much older or less powerful models in mind. The cooking time for dried black beans, for example, is 12 hours on high. This is anything but true — at least with my model (Rival programmable) it took 4 hours on high. At 12 hours on high, I would have ruined the dish and possibly had a fire hazard.

So the times have got to be updated post-haste. The recipes are interesting and somewhat creative. Personally, I don’t want to do too much outside of the slow cooker. I want to throw things in the pot, set it and go to work, and a great number of the recipes have requirements of satellite or preliminary cooking, such as some sautéeing. I don’t mind a little of this but not at the beginning of the cooking time. Who wants to fry onions right before work?

A slow cooker is meant for people who are going off to work or elsewhere and want a meal ready when they come home. While some extra work is sometimes needed, it’s needed with too many of these recipes. If the cooking times could be adjusted so as to better reflect reality, and the recipes adjusted so as to also better reflect users’ needs, my rating would be higher.

Vegan Planet and The Vegetarian Meat and Potatoes Cookbook are two of my all time favorite cookbooks. I can always count on their easy to follow recipes to produce delicious results. Now, Robin Robertson does it again! I am enjoying my Fresh from the Vegetarian Slow Cooker cookbook very much. I just got it a week ago and I have already made Seitan Cacciatore, Spicy Black Bean Chili and Old Fashioned Vegetable Soup.
I went out and bought a lovely Rival Oval Programmable Stainless Steel 5.5 Quart Crock Pot. You can exactly set the cook time in half hour intervals up to 20 hours and you can set the temperature to high, low or warm. The crock-pot automatically switches to warm mode after cooking is complete so you don’t have to worry about burning. The digital countdown shows you how much time is left. The lid fits perfectly on the crock-pot and doesn’t let air seep out like some cheaper models. I highly recommend this sturdy and easy to use crock-pot.
Now back to the wonderful recipes! The Seitan Cacciatore was a very easy to make a hearty stew. We loved the subtle blend of flavors and the seitan was perfectly moist. I made the Spicy Black Bean Chili in less than ten minutes. The results were fabulous, dark rich spicy black bean chili with red peppers, sweet onion and diced green jalapenos, amazing for such a mind numbingly simple recipe. I am eating the Old Fashioned Vegetable Soup as I type. This soup is so wholesome and tender it simply melts in your mouth.
I am a busy vegan who absolutely loves to cook and this cookbook is a lifesaver. No longer will I have to rush home to cook, stopping at a busy grocery store on the way. Instead, I figure out what I want to make in the evening, go to the grocery store after dinner when it is not crowded at all and assemble the ingredients at my leisure. I pop the crock in the fridge until bedtime. I don’t want to leave the cooker on when I am not at home, so I just turn it on before bed and when I wake up transfer the wonderful results to the fridge. They have all day to sit and get delicious (most stews are better if given time to rest) and then I reheat when I get home in the evening. It has worked out very easily and the recipes are mouthwatering. Now I can relax while cooking on busy weeknights and I look forward to going to the store rather then rushing. I think crock-pot cooking is miraculous.
This cookbook is a huge bargain with 200 recipes for everything from appetizers to desserts, soups, stews, vegetables and everything in between. All of the recipes have vegan alternatives for dairy products and most are naturally dairy free. You cannot get better results both in the minimal effort, easy ingredients and outstanding results then this. Every vegan and vegetarian should give Fresh from the Vegetarian Slow Cooker by Robin Robertson a try!

This is the best vegetarian slow cooker cookbook that I’ve found, though there really aren’t many others. I own two vegetarian slow cooker cookbooks and this is the only one I use. In the year that I’ve owned this book I’ve made close to 30 of the recipes. The photos in the book are enticing and the recipes are easy to follow and for the most part have been flavorful and popular with my family. I especially like the spicy recipes like Caribbean Pepper Pot Soup and Red Lentil and Carrot Soup with Coconut. There have been a few duds- Cannelloni with Tomato Eggplant Sauce didn’t turn out well from my slow cooker. I have come to really embrace the technique of precooking the vegetables as suggested by Finlayson since this lends much better flavor and texture to the finished dishes. I am back today to purchase a copy for my sister, also a vegetarian and soon to be a regular slow cooker.

I am a vegetarian with two young daughters – and no time to cook. On top of that my kids are allergic to dairy and soy. I had no idea what to cook for our family and how to find the time to cook it until I found this cookbook. Every recipe I have tried so far (and there aren’t that many I haven’t tried) has been really good. I start the recipe the night before, stick the slow cooker insert in the refrigerator, and then pull it out and get it going in the morning. There aren’t that many vegetarian slow cooker cookbooks out there, and the others I’ve found have been duds, but this one is a keeper!

This is one of the best vegetarian cookbook ever. Most of the recipes are simple and fast to make, and all of them delicious.

It classified every meal into vegan, lacto-ovo, lacto, and ovo; and each recipe has the nutrionational guide too.

In the last edition they added the Smart Carbs chapter, for vegeterians that are also interested in wiselly choosing their carbohydrates.

I totally recommend this book for everyone that want to eat in a healthier way.

You can be a vegetarian and still eat terribly unhealthy food. I bought this book with the hopes I could have a vegetarian meal without having to worry about the contents of the ingredients. So far it has delivered. All the recipes have been delicious and require a medium amount of preparation involved, all while trimming away unnecessary calories. The book uses a lot of different types of meat substitutes, so if you may have to do a bit of research once you purchase the book. I’m impressed and would encourage other blossoming vegetarians to try it out. Good luck!

This book presents itself in the introduction not as a cookbook for a vegetarian diet, but a guide for people who are trying to eat more meatless dishes. That seems about right.

There are some good recipes to be found – mainly in the Soups/Stews and Quick Dinners sections. There are lots of pastas and frittatas (plenty of eggs and milk make this book very ovo-lactovegetarian) and a whole section for Main Dish Salads.

I got this book after seeing it at my library and haven’t been disappointed with it. It has given me tons of great recipes and lots of ideas. I’ve found that some of the recipes take more than 15 minutes though (for example, it will call for cooked rice – which takes 45 minutes to cook all by itself). Otherwise, it’s been great for me.

This is the best vegetarian cookbook I’ve ever used. Every dish I have made from this volume has been delicious, easy, and quick. While some of the recipes take a little planning ahead (ie, calling for cooked rice) the majority really do whip up in no time, and the combinations are creative, tasty and generally quite healthy. I find that with most cookbooks, I make a few recipes, and then lose interest because they are hit or miss. I’ve worked my way through at least half of the recipes in this book and always turn back to it. I would most highly recommend this cookbook for anyone who is low on time, but still wants interesting, delicious meals!

Shulman has authored a number of cookbooks, and although she is a former vegetarian, she knows food and cooking and she is familiar with the goals and hopes of current day vegetarian cooks. Her latest volume represents a good overview of veg cuisine, apart from the absence of most meat substitutes likes seitan. The book contains a very good soup selection, with a variety of both simple and complex stocks upon which to build soups. There are numerous frittata recipes and good selections for winter and fall dishes, for those who want to eat seasonally. Yellow Squash and Rice Gratin and Potato and Chard Gratin stand out. Shulman presents a number of polentas. Of the vegetable dishes, Leeks in Wine is the most unique. She emphasizes freshness and flavor in each recipe. The book includes cooking tips for beginners and enough of her philosophy with food to make for interesting reading. For someone needing a basic cookbook, this would be a fine selection.

Because I am a fan of Marth Rose Shulman’s books, especially her classics Mediteranean Light, Feasts and Fetes, and Light Basics, I decided to try her new book. I have already cooked myself delicious meals and dazzled friends with her inventive recipes.
What is best in Shulman’s books, besides the recipes of course, is her ability to describe what she is up to and to add interesting commentary. Her recipes are obviously carefully tested and, as a result, are almost foolproof. She is obviously someone who loves food and wants the rest of us to enjoy her healthy and delicious discoveries.
A real winner.
