I have followed many healthy diet plans throughout my life and have tried many recipes – most aren’t very tasty but I suffer for the cause. Yet, this book has changed my outlook on low-fat eating. The recipes are simple and delicious. You can really serve them at a party. They give great nutritional info with each recipe. As you read through the book you’ll be surprised at how enticing low-fat can be. Try the Lemon Chicken and the Leek Soup – Mmm…Mmmm.

wonderful, i am on a diet that is working very well for me, we are counting calories, next week we go on to count fat too, this book has it all, plus tasty recipies…including flourless chocklate cake…it is a great help to me in counting up my daily usage, and gives me more than the usually grilled chicken,salad,boring bland foods…yummmmm

Another reviewer panned this book b/c she bought it simply to “know Padma better.” This is a cookbook, not a biography. The recipes are delicious, low in cholesterol and low-fat. They are easy to make and the instructions are clear, so the book is accessible to new cooks but still interesting for those with more experience in the kitchen. I think this is a terrific book, the recipes I’ve used have all been delicious (especially the Spinach and Garbanzo Tapas). I highly recommend it.

This isn’t a bad cookbook but it isn’t the greatest one either, if you don’t buy it you’re not missing out on anything except the pictures of Padma. The recipes aren’t that difficult and the Indian ones which are her specialty are the best in the book. For people who aren’t the best cooks but want to make some decent Indian dishes, Padma’s book is pretty good for that. If I had a dollar for every time she mentions Daniel and her mom, I would be a millionaire…and I could have done without the narratives that are so shallow that you know that they came from the mind of a model. For example, “there I was in a beautiful Chanel gown eating a tuna fish sandwich.” Someone please tell Padma her village called, apparently their model is missing. One more thing, all her recipes are available on the food network website FOR FREE.

This is one of the best vegetarian cookbook ever. Most of the recipes are simple and fast to make, and all of them delicious.

It classified every meal into vegan, lacto-ovo, lacto, and ovo; and each recipe has the nutrionational guide too.

In the last edition they added the Smart Carbs chapter, for vegeterians that are also interested in wiselly choosing their carbohydrates.

I totally recommend this book for everyone that want to eat in a healthier way.

You can be a vegetarian and still eat terribly unhealthy food. I bought this book with the hopes I could have a vegetarian meal without having to worry about the contents of the ingredients. So far it has delivered. All the recipes have been delicious and require a medium amount of preparation involved, all while trimming away unnecessary calories. The book uses a lot of different types of meat substitutes, so if you may have to do a bit of research once you purchase the book. I’m impressed and would encourage other blossoming vegetarians to try it out. Good luck!

Containing over a thousand tried-and-true recipes from cooks all over the country, this cookbook provides easy slow cooker meals, all with reduced fat and reduced salt. Substitutions are the key here, with reduced fat ingredients such as turkey sausage and ground turkey, in place of beef, and low-fat cuts of pork, skinless and boneless chicken breasts, and low-fat cuts of beef in place of the higher fat cuts normally used. Low-fat condensed mushroom and chicken soup (canned), low sodium barbecue sauce, low-fat or nonfat cheeses, and low-sodium tomatoes and tomato sauce replace the usual products.

The soup section is the largest section, and there are over twenty-five versions of chili. Desserts feature fruit, rice pudding, and bread pudding, but there is one Hot Fudge Cake resembling the standard “Denver Chocolate Pudding Cake,” which quickly converts this delicious baked recipe to the slow cooker.

The primary value of this cookbook is that it shows easy adaptations of standard recipes, so if you have favorite recipes and need to adapt them, this offers some good alternatives. Most of the recipes are light on herbs and spices, and adding them or increasing the amounts greatly improves the low salt versions of these recipes. The chicken recipes are particularly good, with a Dill-Lemon Chicken, a Twenty-Clove (Garlic) Chicken, and a Southwestern Chicken which are delicious, though there is a significant loss of texture to the meat when skinless, boneless chicken is used in place of chicken breasts with bones and skin.

Very low fat meat cuts (pork tenderloin or pork top loin, flank steak or extra lean beef cubes, for example), do not result in the cut-with-a-fork, fall-off-the-bone meats one is accustomed to with slow cooking–they remain quite firm (and rather dry) even with hours of cooking. Longer cooking of the pork, especially, creates an almost pasty texture, and the slow cooker’s original purpose of tenderizing a tough, fatty cut is lost. This may be one of the reasons that the soups, which are imaginative, are the largest and most interesting section here. Lovers of slow cookery may prefer to use their own recipes and seasonings for favorites, checking here for ways to cut down on fat and salt and perhaps getting ideas for new ways of cooking. I REALLY WANTED to like this book, but after trying five or six of the recipes, I went back to the original “Fix it and Forget it”. All of the other reviews make good points and are very accurate. Just a few comments from my personal experience. I have a 7 quart slow cooker, and in an attempt to reduce calories, portions have also been reduced. As a result, I have found that many of these recipes do not make enough sauce. For example, I will still use the recommended 4-6 pieces of chicken, but I will double all the wet ingredients, so as to have twice as much sauce. If I don’t do this, my food will burn. I have also had to add additional liquid not called for in recipes just to keep them wet enough to cook. Again, this is probably due to my large slow cooker size. That said, the recipes I made all tasted pretty bad. The mandarin orange chicken combined orange juice and mandarin oranges, which seemed like a great idea, but then it called for poultry seasoning, and I think that ruined it. No one in my house like it. The apricot mustard chicken will get another attempt before I abandon it entirely, with some modifications. Again, I will double the wet ingredients and possibly add some additional water. I am still going to try some of the desserts and see how they turn out. The techniques for reducing calories are no brainers that any experienced dieter already knows, like using lower fat dairy and low sodium soup. These are things most of us do to our “regular” recipes already. So, for my part, I will continue to use the first two books, “Fix-it & Forget-it” and “Fit-it & Forget-it for Entertaining” with a healthy dose of common sense. This book will get pushed to the back of the shelf or re-sold.

OK, I couldn’t help it. I was browsing for another of Sandra Woodruff’s books and decided to add my two cents. I have used this book for 8 years. While dieting I have fended off ravenous family members who swore they would not touch “diet food” with a ten foot pole, yet devour the fat free pizza, calzones, chicken enchiladas, and sticky buns like they were in heaven. My son is now almost 19 and still loves this food. Sandra Woodruff has a gift for making healthy food everyone’s preferred choice.

If you’re looking for a cookbook that gives you many delicious, easy-to-prepare, low fat/fat free recipes–and also shows you how to modify your favorite recipes–this is it. A registered dietician, Sandra Woodruff concentrates on making foods low in calories and fat, and high in nutrition. Not to mention delicious, and extremely easy to prepare. This is probably the cookbook I turn to most often (besides her “Secrets of Fat Free Baking”). My husband–a traditional meat ‘n potatoes kind of guy–even loves these recipes. One of his favorite meals now is the Chicken Fingers with Honey Mustard Sauce. My one complaint is that the book is not indexed very well. So, if you’ve got a favorite recipe–you’ll have many in here–be sure to save that free amazon.com bookmark that’ll come with this must-have cookbook.

I have lots of “quick and easy” cookbooks and “cooking for one” books but this is the one I used the most. These dishes are truly easy to make with fewer ingredients and simple procedures. I never thought that orange juice and a touch of butter (and nothing else) can create a wonderful sauce for fish. Better yet, it relies on fresh foods whenever possible, so you get true home-made cooking. I live alone but occasionally dine with my boyfriend so this book is perfect for me. I was never disappointed by the recipes even though I sometimes don’t measure time or quantities carefully (of course, I am not a complete novice cook either). The book provides 2 sets of ingredients – one for the single diner and another for two. For a few recipes such as Honest Meatloaf (honestly a great basic meatloaf) you have ingredients for two and four servings respectively, as cooking for one would be rather impractical. However, you can easily save or freeze the leftover for another meal. Overall I highly recommend it to singles and couples who don’t want much fuss in the kitchen. There are no photos other than the one on the cover, but then again, you will not get disappinted when the food you make doesn’t look quite as good as those meticulously arranged by professional food stylist and retouched by creative photographers as in most cookbooks and magazines.

For years I have been tired of using recipes sized for 4 or 8-11 people, then get so tired of the food I’ve cooked that I never want to make the recipe again.This book is one of the best cookbooks I have ever invested in. It’s a relief not to have to eat leftovers for the rest of the week and not to be afraid to go to the grocery store afraid I’ll overspend.Great tasting recipes you’ll never tire of, as there is hardly any leftovers. They’re all easy to make. I use this book every week and for entertaining.My blood sugar has returned to normal (along with my budget)- and it’s so concise and meals so tasty, that you want to include them over and over again. Now I eat much more fish and vegetables and have tried new and varied ways of cooking.The pan-fried catfish and Maryland crabcakes are the bomb. I’ve learned to poach chicken. Can’t wait to get to the ground turkey section.You can’t miss with this cookbook.
