First let me say that I own many, many low-carb cookbooks, and this one is THE best I have ever read! Not only does it offer 500, yes, 500 recipes that are easy, fabulous and low carb, but the introduction and ingredient chapters were SPECTACULAR! The introduction was warm, witty and informative. I typically skim through the beginning chapters and get right to the recipes, but I couldn’t put this one down! So many questions that I had were answered in the Low Carb Specialty Foods chapter, not to mention the Polyols chapter and the Where to Find Low-Carb Specialty Products chapter (she doesn’t like paying through the nose for this stuff, either)!The Ingredients You Need to Know About section was the absolute best–necessary and unique information about eggs, fats/oils, flour substitutes (what the heck are guar and xanthan gums, anyway–she answers that, too!), sweeteners (wow, I can have molasses!), vegetables (and I can have carrots, too!), and oh so much more. Her first recipe is addictive enough to eat every day (Heroin Wings)! I wish I could say that I’ve made all the recipes, but I’m so busy trying out the recipes from the first chapter, I haven’t even looked at the other chapters yet, but believe me, I know they’ll be outstanding.This author is down-to-earth, funny and charming. I can relate to her so well. She stresses over and over again to listen to your body and let that be your guide regardless of whether the food is low-carb. This works so well for me. The BEST book you will ever purchase on low-carbing and low-carb recipes. DON’T MISS THIS ONE!

I have a bunch of low-carb cookbooks and will continue to buy more! But, this book is by far the best that I have tried so far. The recipes aren’t just tired repeats of ones found in other books or ones you can find on-line. The hot cereal is a life saver in the morning as you make up the mix in bulk and then just add hot water to a serving of the dry mix. I was so tired of eggs and this is great. Also, the recipes aren’t swimming in fat like so many low-carb recipes.

How do I love Dana Carpender in a completely platonic low carb life saver kind of way? Let me count the ways. Her new cookbook is fabulous. If you don’t have it, you simply must get it. So many great looking recipes. As soon as my copy arrived, I read it cover to cover and am about to read it again. We are trying a different recipe every night. We have tried several already and they are very good. We’re gonna have another one tonight. I have all of her cookbooks and this one is fab. Her books offer a lot of variety of flavors, which is essential to keeping any way of eating interesting. I’m trying to broaden my taste horizens, and her books give me lots of options. I use her cookbooks everyday. I recommend them all the time, but I don’t loan them out. I would be lost if I did! She makes low carb low effort, which makes my life significantly easier. Thanks Dana!

I have all of Dana’s cookbooks. I like all of them and recommend them without reservation. That said, this one is my favorite (so far). I have been low-carbing for about 4 years now. Dana’s books keep me sane and interested in low-carbing. Some of my favorite recipes from this book include: Cheesy Chipotle Soup (p.417). It is great on a blustery day or if you have a congested nose. General Pam’s Cheesecake is super easy and using different extract flavors makes it a new experience every time (p. 500). Brussel sprouts in browned butter (p. 176). I have always like them but this twist makes them really wonderful; even my hubby commented on them. Island pork chops (p. 345) and Jill’s coleslaw (p. 201) are also outstanding.
I have dozens of family favorites from each of her books. I’m never at a loss for something to cook.
Can’t wait to receive her new slow cooker book.

I was so excited to see that Dana Carpender was coming out with a 15 minute recipe book. I have the 500 low carb recipes book and am tremendously pleased with it, but this new book is so awesome that although I have used my 500 recipes book religiously for months, it has sat on the shelf for the last week. I have made a different recipe every night this week using this 15 minute recipe book and am enthralled. I’ve made Sour Cream Ham Supper (my husband loved this), Spanish Rice (scrumptuous, I think I found my new favorite), Beef and Artichoke Skillet (fabulous),Ham and Beans Skillet (so easy, and absolutely delicious), and tomorrow I’m making Pepperoncini Beef; I can’t wait. I’ve never enjoyed cooking so much. All the recipes are so fast and easy. So far, they’ve all been extremely tasty, too. Dana, keep up the good work.

In a motivated mood, I asked my doctor recently to give me a good diet plan so I could take off many unwanted pounds. He didn’t skip a beat. He just said “try the Atkins’ Diet.” So, I did…and it is excellent! What a great way to lose weight, in a healthy manner, with a minimal amount of suffering. I am dropping pounds, not feeling hungry, and ready to experiment with low carbohydrate food recipes, as I have grown a little bored with broiled meats, fish, omelettes and plain salad. I bought an Atkins’ recipe book, and wanting more variety, I also picked up a copy of Dana Carpender’s “15 Minute Low Carb Recipes: Instant Recipes For Dinners, Desserts and More.” This book is wonderful – great meals, lunches and snacks in a jiffy. Many of the recipes call for inexpensive ingredients, which is great considering the expense of a high protein diet. Meat, fish and shellfish aren’t cheap. Her skillet dinners are excellent. I have tried nine of the recipes so far and the results have been delicious. The meals have been easy to prepare and Ms. Carpender’s tips and shortcuts cut down preparation time considerably. I find that I am using this cookbook more than my Atkins book. There is so much variety that meals have become less boring. While losing weight is difficult, variety and food that tastes good make the process less painful. I highly recommend this compilation of creative, effortless low carbohydrate recipes.JANA

So you’re on a low carb diet, looking good and feeling great, but your family is definitely on a high carb diet and getting tired of the plain meat dishes you’ve been serving up lately. Or maybe you are the one who’s tired of them. You would like to be able to expand your low carb recipe list, but you don’t have a lot of time to spend on the fancy schmancy rigamarole that some low carb cookbooks require. If only you could have your fine palate and your waistline both satisfied…Say no more my meat-eatin’ bretheren! The Everyday Low Carb Slow Cooker Cookbook was literally the answer to my prayers some months ago. As a mom of two small boys and wife to a very picky man I was having a hard time keeping everybody happy at the dinner table while I watched my weight; the “two-entrée meal” was becoming the norm and it took way too much time. In my high carb days I had used my blessed time saver, the crock pot, regularly but recently it was gathering dust on the top shelf. Thank the Lord I can put it to work again and regain my time/sanity.Now I have to try a minimum of six recipes before I feel that I can review a cookbook with fairness. The recipes that I have completed from TELCSCC are:Seafood Crustless Quiche (I didn’t miss the crust and neither did they – Fabulous!)Orange Pork
Sausage and White Bean Soup (my dh literally told me it was the best soup ever, bar none)
Chicken with Sun-Dried Tomatoes and Artichokes (rich and hearty, a complete meal)
Chicken with 40 Cloves of Garlic (yes, really!)
Pesto Beef with Grape Tomatoes and Fresh MozzarellaI think the genius of this cookbook is that the authors recognize that low carb dieters are not only just as busy as everybody else, but also come in a variety of skill levels in the kitchen. Accordingly, there is a special section at the beginning just for the quick’n'easy crowd that features fewer ingredients and timesavers like canned food and packaged mixes to add to your fresh meats and veggies. Believe it or not, the Pesto Beef recipe was one of these! Not that the more “complicated” recipes are that much longer or harder, believe me: the authors make it clear that since slow cookery is all about convenience, their mission is to keep it as simple as possible without sacrificing taste. It would appear that their mission was successful.In many cases these recipes are so loaded with veggies and hearty broth that you won’t need to make a salad or a side dish and nobody will even notice. There are so many more that I haven’t gotten to yet, but I’m dying to try the desserts next; Peanut Butter Fudge Cake with Peanut Butter Fudge Drizzle, Coconut Custard, and Pumpkin Pudding, which is promised to be like the pie without the crust. Judging by my success with the quiche, the slow cooker is a natural with those eggy custards and puddings (averaging about 3-4 hours on low). I would compare this cookbook to Mable Hoffman’s Crockery Cookery (the high-carb “bible” for slow cookers) in terms of quality & variety of recipes and simplicity of use. My family has had no complaints since I’ve started using it, in fact they like TELCSCC dishes better than many of my higher carb dishes. I believe that this is truly the answer for the lifestyles and tastes of a modern health-conscious Americans.

Well, I have to say that I’ve tried the majority of recipes in this book and they have all been bland and mediocre at best. I really WANTED to like it… so I kept trying different recipes. The bottom line: I’ve learned to make some amazing, flavorful slow cooker dishes from cookbooks, but I can’t recommend a SINGLE recipe in this one.
I’ve been on the diet for several years now, so I do use low carb cookbook recipes a LOT and am very careful to follow the instructions. I use my slow cooker weekly and have found better recipes for free on the net and from Dana Carpenter’s books (though I haven’t seen Dana’s new slow cooker book yet).
A few points:
– the thai-flavored dishes don’t taste anything like thai food.
– only partial carb/nutritional listings are given.
– spent money getting special ingredients like canned cheese soup, tapioca, red and green thai curries, etc., only for the dishes to be subpar.
– too many carbs in many dishes.
– not enough use of herbs/spices to liven up flavors.
FYI – A few other reviewers have said this, but slow cooker temps really do vary by maker and model these days and the cooking times were way off for my newer expensive Rival 5 qt. with the removable crock (recommended by the authors). Everything burns if you don’t watch it – which is a common complaint about the new machines when compared to the classics. Times were more accurate after I went out and bought a much cheaper second crockpot (West Bend, I think). Still, the results were just so-so.

Even though I have always loved to cook, I lost the desire to do so after starting the low carb lifestyle a little over a year ago. Bland salads and grilled chicken breasts were my staples. I found myself browsing the cookbook section of a book store one day and began flipping through Dana’s book – I was hooked. I picked it up and spent 4 hours straight reading everything (I had a long car ride to do so). I spent about two weeks making all sorts of recipes from this book and fell in love with cooking all over again. I still use recipes from this and several of her other books several times a week, but I finally popped back into the creative mood and spend the other days experimenting with my own low carb recipes!! I bought this book used from Amazon.com and frankly I was skeptical. The reviews are what made me buy it. I have bought cookbooks in the past and paid up to .00 for them and was able to use only 1, maybe 2, recipes from the book. This book is AWESOME! I am actually reading it page for page. I tried 2 recipes the day I got it and can’t wait to try more. I am about to order all Dana’s other books. Again my question is why would anyone ever sell this book!
