Potato Candy
1 lg. potato, cooked & peeled
Confectioners’ sugar
Peanut butter
Mash potato with sugar, may take 1 pound or more. Mix until stiff like dough. Sprinkle confectioners’ sugar on cutting board. Roll the confectioners sugar and potato mixture out like dough. Spread with peanut butter. Roll up like jelly roll. Cut in slices. Keep in freezer so sugar does not melt. For added variety you can add food coloring to make green and red candy for Christmas.
Potato candy tastes like white fudge.
