Cinnamon Coffee Cake
Preheat oven to 375. Grease a square cake pan of 8x8x2 inches.
You will need to folowing ingredients:
1 1/2 cup flour
3/4 cup sugar
2 1/2 tsp. baking power
3/4 tsp. salt
1/4 c. shortening
3/4 cup milk
1 egg
1/3 cup brown sugar
1/4 cup flour
1/2 tsp. cinnamon
3 Tbsp. firm butter
Sift together in large mixing bowl the top 4 ingredients. Add to the dry ingredients the shortening, milk and egg. Mix till well blended. Then beat vigorously 1/2 minute. Spread into your greased pan.
In another mixing bowl measure in the brown sugar, flour, cinnamon and firm butter. Mix with a hand pastry blender until crumbly. Sprinkle over batter.
Bake for 25 to 30 minutes
Bread Sticks
This recipe has been a favorite of mine. I always bake them for the holidays and when I go to a friends home for dinner.
1 package of frozen bread dough
1 stick of soft butter
1 shaker of garlic salt
1 can of Parmesan cheese
Remove 1 or 2 loafs of frozen bread dough. Let thaw till workable. Slice the bread into 1 inch pieces. Then using your hands roll each piece between your hands to make the piece into a rope. Lay it on a baking sheet. Continue till you have done all pieces.
Place butter in microwave and melt. Then using a pastry brush, brush the melted butter on top of the rope shaped bread sticks. Sprinkle with garlic salt and Parmesan cheese. Let rise for about 2 hours or till almost doubled in size.
Bake in 350 oven for about 20 minutes or till the bottoms are golden brown. Remove from oven and then brush with melted butter again. Sprinkle more Parmesan cheese on top.
Serve and enjoy!
Zucchini Bread
PREP Time: 25 minutes (Ready to serve in 2 hours)
Preheat oven to 350. Lightly grease and lightly flour 3 bread loaf pans. Size 8x 3/34 x 2 1/2 set aside.
Grate 2 medium zucchini and measure out 2 cups and set aside.
3 Cups of Flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
2 tablespoons of cinnamon
1 teaspoon allspice
1/2 teaspoon of ground cloves
1/4 teaspoon of pumpkin spice
1 cup of vegetable oil
3 whole eggs
1/2 cup of granulated sugar
1 cup of firmly packed dark brown sugar
1 teaspoon of vanilla
2 cups of grated Zucchini
1 and 1/2 cup of chopped walnuts
1 cup of raisins
16 oz can of Pillsbury Creamy Vanilla Frosting
Measure and mix all dry ingredients into mixing bowl and set aside. Combine oil, sugars and eggs in a separate mixing bowl. Blend well with mixing spoon and then add to dry ingredients and blend well. Stir in vanilla and zucchini, then add chopped walnuts and raisins, mix well.
Measure out evenly into the 3 bread loaf pans. Bake at 350 for 45 to 60 minutes. Oven temperatures may vary, so check after 45 minutes by inserting a toothpick in center of bread. If it comes out clean remove bread, if toothpick is not clean continue cooking for additional 10 to 15 minutes.
Once bread is done baking, remove from oven and let stand 15 minutes.
Remove bread from pans and frost with Pillsbury frosting. Let bread cool for another 20 minutes, then slice and serve. 6 servings per loaf.
